1 cup margarine or butter, softened
1 cup firmly packed brown sugar½  cup granulated sugar
2 eggs2 TB. milk
2 tsp. vanilla1 3/4 cups all-purpose flour
1 tsp. baking soda½  tsp. salt (optional)
2 ½  cups Quaker Oats (quick or old fashioed, uncooked)2 cups (12 oz.) semi-sweet chocolate chips
1 cup chopped nuts (optional)
Heat oven to 375 degrees. Beat margarine and sugars until creamy. Add eggs, milk, and vanilla. Beat well. Add combined flour, baking soda and salt; mix well. Stir in oats, chocolate chips and nuts; mix well.
 Press dough onto bottom of ungreased 13" x 9" inch baking pan.
Bake 25-30 minutes or until light golden brown. Cool completely; cut into bars. Store tightly covered.Servings: 32 bars

1 cup buttermilk               
½ cup baking cocoa
¾ cup oil                                 
2 cups flour
2 eggs, slightly beaten     
2 cups sugar
1 tsp. vanilla                     
1 tsp. salt
1 cup water                      
1½ tsp. baking soda

Preheat oven to 350°.  Grease & flour 9x13 pan. 
Mix buttermilk, oil, eggs & vanilla.
 Stir water & cocoa in small saucepan over medium heat until
 smooth.  Remove from heat.
 Sift remaining dry ingredients into egg mixture, stir until
 combined, then stir in cocoa mixture. 
Pour into prepared pan (batter will be runny). 
Bake 30-35 minutes or until toothpick inserted in center comes out clean. 
Frost with chocolate Buttercream frosting (recipe in this book).

3 cups chili beans
pinch of bay leaf (I've never heard of this - she must have meant 1 bay leaf
3 sections garlic
3 chopped onions (about 3" around)
1 Tbsp. chili powder
3/4 tsp. curry powder
1 Tbsp cumin powder
1 Tbsp salt
1 quart tomatoes and 1 pit tomato juice
Wash beans, cook with leaf. Fry meat onions and garlic till brown. Add to beans with other ingredients. Simmer 1 hour.

1½ cups uncooked salad macaroni             
½ cup diced celery
1(10oz.)pkg. frozen peas                             
6 boiled eggs(chopped)
¾ cup mayonnaise                                
_ cup sweet pickle relish
½ cup diced onion                                 
2(5oz.)cans chicken

Cook macaroni until tender. 
Rinse in cold water; drain. 
Rinse peas until ice is gone; drain. 
Mix all ingredients in large bowl. 
Cover and refrigerate at least 4hrs(over-night is best). 
Makes about 8cups.

Microwave - Stir - Microwave again.
Serve warm, when all the cheese is melted into the chili.

Bake white cake and cool. Crumble in pan ½ of cake. Cover with Jello and fruit cocktail which is partly jelled. Then crumble the rest of cake and top with whipped cream, 3 pkg. of Jello and 1 can drained fruit cocktail. May also do like strawberry shortcake. Top white cake with strawberry Danish dessert which you cook like directions on box. When cool add strawberries and top with whipped cream.

20-40 rhoads dinner rolls
1 box regular butterscotch pudding mix (not instant)
1 teaspoon cinnamon
½ cup butter
½ cup brown sugar
½ cup chopped pecans or walnuts

2 cubes butter
1/3 cup cocoa
2 bups sugar
sprinkle of salt
4 eggs
1 ½ cups flour sifted
2 teaspoons vanilla
½ teaspoons baking powder

melt butter in sauce pan and add cocoa. Combine with remaining ingredients. Spread onto greased large cookie sheet or 9X13 pan bake at 350 for 25mins

Brownie

4 oz semi-sweet chocolate
1cup butter
1 ¾ cup sugar
¼ cup walnuts
1 cup flour
4 large eggs
1 teaspoon vanilla
dash of salt

Melt chocolate and butter together in small saucepan; cool slightly. Combine sugar, flour, eggs, vanilla, and salt. Add nuts to chocolate to coat then combine with egg mixture. Mix until just blended well. Place cupcake liners in your muffin pan; fill ½ full with better bake at 350 degrees for 25 minz

1-12oz jar chili sauce
1 – package of onion soup mix
Mix ingredients and cover meat and cook at 350 for 30 min a pound
Or on low heat in crock pot till done

Bratten’s Clam Chowder

For many years, Bratten’s Restaurant was the premier place for seafood in Utah.
The restaurants are gone now, but this is their signature Chowder recipe.
From Connie Turner Wescoatt,

2 cups potatoes
1 cup celery
1 cup onions
2 can clam broth
Chop finely. Simmer 20 min in clam broth adding enough water to barely cover.
¾ cup butter
½ cup flour
1 qu. Half & Half
cream sauce: Melt butter blend in flour. Add cream using wire whisk.
1 ½ tsp. salt
½ tb sugar
2 cans clam meat
add to cooked veggies and cream sauce. Heat through.

add 1 cup nuts
1 cup salad oil
bake 40 mins at 350

BBQ Sauce

Barbecue Sauce

2 TB. Butter
2 small onions chopped2 tsp. brown sugar
2 tsp. vinegar or lemon juice2 tsp. Worcestershire sauce
1 tsp. salt1 tsp. paprika
1 tsp. dry mustard1 tsp. chili powder
1 ½ cups tomatoes or juice Simmer and pour over cooked meat. Bake 1 hour at 350 degrees.

5cups apricots pitted and mashed
5cups sugar
4cups crushed pineapple

Bring to a boil string constantly
Stir in two large jello's
simmer 15mins to desired thickness
 ladle into hot jars. seal. let sit on counter top
for 24 hours refrigerate any that don't seal. 

Applesauce bread

1/3 cup butter, softened
1 cup sugar
1 egg
1-1/4 cups applesauce
1-1/2 cups all-purpose flour
3/4 teaspoon baking soda
3/4 teaspoon ground cinnamon
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground nutmeg
1/8 teaspoon ground cloves
1/2 cup raisins
1/2 cup chopped walnuts

 

In a large bowl, cream butter and sugar. Add the egg and applesauce; mix well. Combine the flour, baking soda, cinnamon, baking powder, salt, nutmeg and cloves. Stir into creamed mixture just until moistened. Fold in raisins and nuts.

Pour into a greased 8-in. x 4-in. loaf pan. Bake at 350° for 60-65 minutes or until a toothpick inserted near the center comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely. Yield: 1 loaf.

Apple-Cinnamon Oatmeal Cookies

Apple-Cinnamon Oatmeal Cookies

1¼ cups butter 1 tsp. baking soda
¾ cup brown sugar 1 tsp. salt
½ cup sugar 1 tsp. cinnamon
1 egg ¼ tsp. nutmeg
1 tsp. vanilla 1½ cups flour
10 packets apple-cinnamon instant oatmeal*
Preheat oven to 375°. Mix butter, sugars, egg & vanilla. Sift in dry ingredients except oatmeal, mix well. Stir in oatmeal. Drop by tablespoon onto ungreased cookie sheet. Press to desired thickness with a glass dipped in sugar. Bake 8-10 minutes or until bottom of cookies are golden. Leave on cookie sheet 1 minute before removing to cool. Store in an airtight container. Makes about 4½ dozen.
*You can substitute any flavor of instant oatmeal, or use 3 cups quick oats.

1 cup applesauce
1 cup nuts
1 cup raisins 

Mix flour, cinnamon, net meg and salt together
Dissolve baking soda into applesauce
Alternate between applesauce and the flour mixture into the dough
Mix together
put on baking sheet 
preheat oven at 350 bake for 15 min

 Ingredients
 2 cups all-purpose flour, sifted before measuring
1 cup sugar
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
2 teaspoons baking soda
1 cup raisins
1 cup chopped walnuts
1/2 cup melted butter
2 cups applesauce

Directions for applesauce cake.
Into a mixing bowl, sift together the dry ingredients. 
Add raisins, chopped walnuts, melted butter, and applesauce. 
Beat until well blended. 
Pour batter into greased and floured 9-inch square pan or 11 3/4 x 7 1/2 baking pan.
Bake at 350° for 45 to 50 minutes. 
Cool and spread with cream cheese or butter frosting.
If desired, decorate applesauce cake with grated orange peel and walnut halves.

Apple Kuchen

1/2 cup margarine/butter 
(1 stick soft) 
1 package yellow cake mix 
(do not bake use package right from box)
1/2 cup coconut

Mix together put in 9 by 13 greased pan
Bake at 350 for 10 mins

Mix 1 cup sour cream
With 1 egg
Then Slice 2 1/2 - 3 cups apples
Sprinkle apples with
1/2 cup sugar mixed with cinnamon
Mix together
& place on top of warm baked crust

Then bake 25 minutes at 350 degrees. 
Serve with vanilla ice cream, whipped cream or whipped topping.

Put sliced apples (or apple sauce) in baking dish. 
Pour batter over apples. 
Sprinkle with spices (nutmeg, cinnamon.)

1 cup margarine(Butter) (1/2 pound)
6 T Powder Sugar
2 Cups flour 
2 Cups nuts


Mix margarine (butter) and sugar
Slowly add the flour
Then nuts
Mix well
Shape Like a finger


350degrees for 20 mins
Roll in powder sugar while warm (not hot)
Makes 46 - 52 cookies

One recipe i found online
1 c. butter, softened
6 tbsp. powdered sugar
2 c. sifted cake flour
1 tsp. vanilla
1 c. ground walnuts
 
Cream butter and sugar. Add flour, then vanilla and nuts. Shape into little rolls 1 1/2 inches long the diameter of a finger. Place on ungreased baking sheet and bake at 350 degrees for 20 minutes. Let cool, then dust with powdered sugar.

Alfredo Sauce

Alfredo Sauce

½ cup butter
¾ cup fresh grated Parmesan cheese
½ cup cream or half and half and
2 teaspoons dried parsley.

Melt butter in sauce pan, once melted add in the freshly grated Parmesan cheese, cream (or Half and half), and the dried parsley.
Stir constantly until cheese is melted. If sauce is not thick enough, you can add more Parmesan cheese, a little at a time until its thick enough.

Boil 6oz. of pasta until done and serve with sauce.
